abouthow it all started

It all started seven years ago with a simple question — could a fine-casual restaurant specializing in gourmet burgers get away with adding delicious fried chicken sandwiches to its menu?

But not just any regular ol’ fried chicken sandwich. These fried chicken sandwiches needed size (a marinated + spanked 6oz breast). They needed to come on a bun that was buttery, soft to the touch and crave-worthy on its own (local brioche from Lyon Bakery). They needed unique flavor combinations that would push the boundaries of what a “fried chicken sandwich” could be (think…bacon, fried egg, pimento cheese, apple butter + pickle chips). Most importantly, they needed a bit of personality to match that of the person enjoying it (our custom rubs with four different levels of heat).

When their first chicken sando hit their menu, it became an instant hit and eventually become the most popular menu item.

In 2019, while starting to make plans for another restaurant, the growing team began to speak about the recent fried chicken sandwich explosion and started to wonder, what would a restaurant concept consisting of their most popular fried chicken creations look like?

This simple question brought us to present day and the beginning of a new chapter. The Rub Chicken & Beer opened in January 2020 as a restaurant pop-up within Hen Quarter in Old Town. It’s a new kind of experience, one where you can enjoy a fine-casual restaurant downstairs at The Rub and a full-service restaurant and brunch experience during the evenings and weekends upstairs at Hen Quarter. We hope you enjoy it as much as we enjoyed creating it.
